Broccoli and Celery Soup // Zuppa di broccoli e sedano

May is almost come to an end, but the weather hasn't put its act together yet. One day I'm wearing a t-shirt, the next one I'm wearing a hundred layers of clothes and I'm still freezing. Okay, that also may have to do with the fact that I'm alway cold, but that's not my point.

Anyway, the other day I had yet another soup for lunch. And you know what's the best part of it? That I can share my love for soups with you all. Why I love soups so much? Because it's impossible to screw them up! Too watery? Just let them boil a little more. Too thick? Add some water or stock for soup's sake!

That being said, this soup has everything you need. It's delicious, packed with vitamin C, cheap and super easy to make.

And I know a lot of you may not like broccoli, or maybe you don't like the idea of eating them, either way, they are a real superfood, and they have so many health benefits it's a shame not to eat them. INGREDIENTS
1 serving
  • 90 g (1 cup) broccoli florets
  • 2 medium-sized celery sticks
  • 1 teaspoon extra virgin olive oil
  • 1 pinch chili powder
  • Chives, for garnish
  • Salt

INSTRUCTIONS
  • Wash the broccoli and celery. Trim and roughly chop them.
  • Heat the oil in a pan over medium-high heat, then add the celery and cook for about 2 minutes. Add the broccoli, chili powder, salt and 240 ml (1 cup) of water, bring to a boil and cook for 5 minutes.
  • Blend until the mixture is creamy. 
  • Garnish with fresh cut chives and serve.


Maggio è ormai giunto al termine, ma il tempo non ha ancora messo a posto la testa. Un giorno indosso una t-shirt, il giorno dopo indosso un centinaio di strati di vestiti e ancora congelo. Okay, quello potrebbe aver a che fare con il fatto che ho sempre freddo, ma non è questo il mio punto.

Ad ogni modo, l'altro giorno ho mangiato l'ennesima zuppa per pranzo. E sapete qual è la parte migliore di questo? Che posso condividere con voi il mio amore per le zuppe. Perché amo le zuppe così tanto? Perché è impossibile rovinarle! Troppo acquose? Fatele bollire un altro po'. Troppo dense? Aggiungete un po' di acqua o brodo per l'amore di zuppa!

Detto questo, questa zuppa ha tutto ciò di cui avete bisogno. È buonissima, carica di vitamina C, economica e molto facile da fare.

E lo so che a molti di voi probabilmente non piacciono, o forse non vi piace l'idea di mangiarli, comunque sia, sono un vero supercibo, e hanno così tanti benefici per la salute è un peccato non mangiarli. INGREDIENTI
1 porzione
  • 90 g di cimette di broccoli
  • 2 stecche medie di sedano
  • 1 cucchiaino di olio extravergine di oliva
  • 1 pizzico di peperoncino in polvere
  • Erba cipollina, per guarnire
  • Sale

PROCEDIMENTO
  • Lavate i broccoli e il sedano. Tagliateli e tritateli grossolanamente.
  • Scaldate l'olio in una padella su fiamma medio-alta, quindi aggiungete il sedano e cuocete per circa 2 minuti. Aggiungete i broccoli, il peperoncino, sale e 240 ml di acqua, portate a bollore e cuocete per 5 minuti.
  • Frullate tutto finché cremoso.
  • Guarnite con erba cipollina fresca tagliata e servite.
