Legume Soup with Lacinato Kale and Mushrooms // Zuppa di legumi con cavolo nero e funghi

Snow has almost completely melted, but it's still pretty cold and I'm still in the mood for soups. So yeah, you're stuck with another soup of mine.

And this time, for the first time, it's all about legumes. And veggies. It's not that I got tired of grains, I still love them, I just was in the mood to try something different, and since I've recently bought green split peas I figured why not.


I've tried them prior making this soup and I noticed, no matter how long you cook them, they still remain a little crunchy, so what's better than pairing them with soft cranberry beans? This way you have all. And the colour contrast is a bonus.

Lacinato kale and button mushrooms are also part of that all I just mentioned. If you have been following me for a while, you know how much I love kale, or cabbages in general, in soups, but mushrooms are new to me. I love them, but I usually don't put them in soups because they end up soggy as if they were a sponge. But that texture actually works in here.


Oh, I almost forgot the most important thing, this soup was darn delicious!

INGREDIENTS
1 serving
  • 60 g (1/3 cup) green split peas
  • 40 g (1/3 cup) cranberry (Borlotti) beans
  • 50 g (2 cups) lacinato kale cut into ribbons
  • 2 button mushrooms
  • 1 small onion
  • 1 carrot
  • 1 celery stalk
  • 590 ml (2 1/2 cups) vegetable broth
  • 1 bay leaf
  • 1/2 tablespoon red wine vinegar
  • 1/2 tablespoon extra virgin olive oil
  • 1 teaspoon baking soda
  • Salt
  • Pepper

INSTRUCTIONS
  • Place the beans in a bowl with cold water, stir in the baking soda and let them soak for 8 hours. Or overnight.
  • Rinse and drain the beans. Rinse and drain the split peas as well. Finely chop the onion, carrot and celery. 
  • Heat the olive oil in a pot over medium heat. Add the chopped vegetables and cook for 2-3 minutes, stirring with a wooden spoon.
  • Add the split beans, beans, bay leaf and broth, and bring to a boil. Reduce the heat to low, cover and simmer for 30 minutes.
  • Meanwhile, clean the mushrooms with a wet cloth then slice them. Remove the bay leaf, then add the kale and mushrooms and cook for 15-20 minutes, until the legumes are cooked.
  • Stir in the vinegar, season with salt and pepper and serve.


La neve si è quasi sciolta completamente, ma è ancora abbastanza freddo e sono ancora nell'umore per le zuppe. Ebbene sì, dovete sorbirvi un'altra delle mie zuppe.

E questa volta, per la prima volta, è di legumi. E verdure. Non mi sono stancata dei cereali, li adoro ancora, ero soltanto dell'umore di provare qualcosa di diverso, e dato che di recento ho acquistato dei piselli verdi spezzati mi sono chiesta perché no.

Lo ho provati prima di fare questa zuppa e ho notato che, non importa quanto a lungo li cuoci, restano comunque un po' croccanti, dunque che c'è di meglio che accoppiarli con morbidi fagioli borlotti? In questo modo avete tutto. E il contrasto di colore è un bonus.

Anche il cavolo nero e i funghi champignon fatto parte di quel tutto di cui ho appena parlato. Se è da un po' che mi seguite, sapete quanto mi piace il cavolo nero, o cavoli in generale, nelle zuppe, ma i funghi sono nuovi per me. Li adoro, ma solitamente non li aggiungo nelle zuppe perché diventano mollicci come fossero delle spugne. Ma a dire il vero quella texture funziona bene qui.

Oh, quasi dimenticavo la cosa più importante, questa zuppa era dannatamente deliziosa!


INGREDIENTI
1 porzione
  • 60 g piselli verdi spezzati
  • 40 g fagioli borlotti
  • 50 g cavolo nero tagliato a strisce
  • 2 funghi champignon
  • 1 cipolla piccola
  • 1 carota
  • 1 gambo sedano
  • 590 ml brodo vegetale
  • 1 foglia alloro
  • 1/2 cucchiaio aceto di vino rosso
  • 1/2 cucchiaio olio extravergine di oliva
  • 1 cucchiaino bicarbonato di sodio
  • Sale
  • Pepe

PROCEDIMENTO
  • Mettete i fagioli in una ciotola con acqua fredda, unitevi il bicarbonato e lasciateli in ammollo per 8 ore. O per tutta la notte.
  • Scolate e sciacquate i fagioli. Sciacquate anche i piselli. Tritate finemente la cipolla, carota e sedano.
  • Scaldate l'olio di olive in una pentola su fiamma media. Aggiungete le verdure tritate e cuocete per 2-3 minuti, mescolando con un cucchiaio di legno.
  • Aggiungete i piselli, fagioli, foglia di alloro e brodo, e portate a bollore. Riducete la fiamma, coprite e fate sobbollire per 30 minuti.
  • Nel frattempo, pulite i funghi con un panno inumidito e affettateli. Togliete la foglia di alloro, quindi aggiungete il cavolo e funghi e cuocete per 15-20 minuti, finché i legumi non sono cotti.
  • Untive l'aceto, salate e pepate, e servite.
