Caramelized Banana Oatmeal // Porridge alle banane caramellate

Do you know what day is today? It's Inglourious Bananas' 1st birthday! I can't believe it's already been a year since I embarked on this journey, and I can't believe how much has happened. Not only my cooking skills have improved as I keep challenging myself every day to do more and be more creative, but I've also "met" a lot of great people, you guys! And whether you are another blogger or just someone who likes my recipes, thank you, thank you so much for sticking around and for giving me the motivation to keep doing this.


That said, since bananas are my favourite fruit and the blog is also named after them, I decided to celebrate with this caramelized banana oatmeal. I saw the recipe on Pinch of Yum months ago and I felt immediately in love with it because, unlike all the other caramelized bananas recipes I've seen, there aren't any refined sugars. Just some maple syrup and cinnamon. All natural ingredients.


And I'm probably saying this because I love bananas, but this oatmeal was really good. Like best-oatmeal-you'll-ever-have good. You can serve it with some chocolate or extra maple syrup. I would usually go for the latter but I was out of maple syrup, I used up to the very last drop to caramelize the banana.

INGREDIENTS
1 serving
  • 50 g (1/2 cup) rolled oats
  • 1 banana, sliced
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • Cinnamon
  • Salt

INSTRUCTIONS
  • Add the oats and 240 ml (1 cup) water in a small pot. Bring to a boil and simmer, stirring, for about 5 minutes, or until the oats reach your desired consistency. Season with a pinch of salt and set aside.
  • Meanwhile, heat the oil in a skillet over medium heat. Add the maple syrup and a pinch of cinnamon and bring to a simmer. Add the banana slices in a single layer and cook for 2-3 minutes on each side.
  • Remove from the heat and stir the bananas into the oatmeal, leaving some for topping.
  • Pour into a bowl, add the reserved bananas and any other desired topping and serve.


Sapete che giorno è oggi? È il primo compleanno di Inglourious Bananas! Non ci posso credere che è già passato un anno da quando ho intrapreso questo viaggio, e non riesco a credere a quando sia accaduto. Non solo le mie capacità culinarie sono migliorate in quanto continuto a sfidare me stesa ogni giorno per fare di più ed essere più creativa, ma ho anche "incontrato" tante persone fantastiche, voi! E che siate un altro blogger o qualcuno a cui piace le mie ricette, grazie, grazie mille per essere restati nei paragi e per avermi dato la motivazione per continaure a fare questo.

Detto questo, dato che le banane sono il mio frutto preferito e anche il blog porta il loro nome, ho deciso di festeggiare con questo porridge alle banane caramellate. Ho visto la ricetta su Pinch of Yum mesi fa e me ne sono innamorata subito perché, a differenza di tutte le altre ricette per le banane caramellate che ho visto, non c'erano zuccheri raffinati in questa. Solo un po' di sciroppo d'acero e cannella. Tutti ingredienti naturali.

E probabilmente dico questo perché adoro le banane, ma questo porridge era davvero ottimo. Tipo miglior porridge che mai avrete buono. Potete servirlo con del cioccolato o altro sciroppo d'acero. Solitamente opterei per la seconda ma avevo finito lo sciroppo d'acero, avevo utilizzato proprio fino all'ultima goccia per caramellare la banana.

INGREDIENTI
1 porzione
  • 50 g fiocchi d'avena
  • 1 banana, affettata
  • 1 cucchiaio olio di cocco
  • 1 cucchiaio sciroppo d'acero
  • Cannella
  • Sale

PROCEDIMENTO
  • Aggiungete i fiocchi d'avena e 240 ml di acqua in un pentolino. Portate a bollore e fate sobbollire, mescolando, per circa 5 minuti, o finché l'avena ha raggiunto la consistenza desiderata. Insaporite con un pizzico di sale e tenete da parte.
  • Nel frattempo, scaldate l'olio in una padella su fiamma media. Aggiungete lo sciroppo d'acero e un pizzico di cannella e fate sobbollire. Aggiungete le fette di banana in un unico strato e cuocete per 2-3 minuti su ogni lato. 
  • Togliete dal fuoco e versate le banane nel porridge, lasciandone alcune per guarnire.
  • Versate in una ciotola, aggingete le banane tenute da parte e altri toppings desiderati e servite.

  4. Nonostante debba essere buono questa volta passo.. non sono riusciti mai a farmi mangiare le banane... ed ora a 73 non ci vado ancora vicino. :(

  5. Banana and oat are best match, I like this combination very much. But I haven't tried to caramelize the banana before. Add milk or cream is really good. :)

    1. I don't like it with milk and never tried with cream, but I'm not a fan of it. I manage to make creamy oatmeals everytime anyway :)
