Moroccan Chicken and Cauliflower Couscous // Pollo e couscous di cavolfiore alla marocchina

I've been making cauliflower rice so often to make those damn cauliflower buns that now that I've mastered them, I miss cutting cauliflower into florets and magically transform them into rice. What I'm trying to say is that I needed to find an excuse to make it and that's when I remembered saving this Moroccan chicken cauliflower couscous bowls recipe. I wanted to try it back in February but I eventually ended up using the chicken breast to make a quick curry.

Anyway, that is one of the most delicious cauliflower recipes I've ever tried. Although I did make some changes here and there - and I skipped the dressing -  I really have to compliment Cheyanne for creating this explosion of flavours and textures.


The cauliflower couscous is so fluffy and light it feels as if you are eating clouds. I'm not even sure that makes sense. Maybe I should have said cotton candy, although it's exactly the same. And it's packed with flavour. There's the sweetness of dates, the freshness of mint and lemon and the saltiness of pistachios. 


And on top of that, the holy grail of chicken breasts, a glorious, juicy chicken breast that tastes like heaven thank to all those Moroccan spices.

INGREDIENTS
1 serving
For the chicken
  • 1 chicken breast (about 230 g // 8.1 oz)
  • 1/2 tablespoon of extra virgin olive oil
  • 1/2 teaspoon of ground cumin
  • 1 teaspoon of sweet paprika
  • 1/4 teaspoon of ground ginger
  • 1/4 teaspoon of ground cinnamon

Fo the couscous
  • 1/4 medium cauliflower, cut into florets
  • 1/2 tablespoon of extra virgin olive oil
  • 1 tablespoon of minced fresh mint
  • 1 tablespoon of lemon juice + grated zest of 1/4 lemon
  • 1 pinch of ground cumin
  • 1 pinch of salt
  • 2 Medjool dates, pitted and chopped
  • 10 g (2 tablespoons) of shelled pistachios

INSTRUCTIONS
For the chicken
  • Preheat the oven to 220°C (425°F). 
  • In a small bowl, combine the cumin, paprika, ginger and cinnamon, then stir in the oil. 
  • Rub the mixture all over the chicken and transfer it to an oiled baking dish.
  • Bake in the oven for about 20 minutes, until chicken is cooked through. Remove from the oven and let rest 5 minutes. 

For the couscous
  • Place the cauliflower into the food processor and pulse until it resembles couscous.
  • Heat the oil in a non-stick skillet over medium heat. Add the cauliflower and cook, stirring frequently, until the couscous turns light golden, about 5 minutes. Remove from the heat and allow to cool slightly. 
  • Add the cumin, juice and zest of the lemon, mint and salt and stir to combine.

  • Before serving, toss the couscous with the dates and pistachios. Transfer to a bowl and top with the chicken breast. 

Ho fatto il riso di cavolfiore così spesso per fare quei maledetti panini di cavolfiore ch ora che li ho perfezionati mi manca tagliare il cavolfiore in cimette e trasformarle magicamente in riso. Quello che voglio dire è che avevo bisogno di una scusa per farlo ed ecco quando mi sono ricordata di aver salvato queste bowls marocchine con pollo e couscous di cavolfiore. Volevo provarla lo scorso febbraio ma alla fine avevo utilizzato il petto di pollo per fare un curry veloce.

Comunque sia, quella è una delle ricette con il cavolfiore più gustose che abbia mai provato. Anche se ho fatto alcune modifine - e ho saltato il dressing - devo davvero fare i complimenti a Cheyanne per aver creato quest'esplosione di sapori e consistenze.

Il couscous di cavolfiore è così soffice e leggero che sembra di mangiare delle nuvole. Non sono sicura che abbia senso. Forse avrei dovuto dire zucchero filato anche se non è proprio lo stesso. Ed è ricco di sapore. C'è la dolcezza dei datteri, la freschezza della menta e del limone e la sapidità dei pistacchi.

E sopra a questo, il sacro Graal dei petti di pollo, un glorioso, succoso petto di pollo che ha un sapore divino grazie a tutte quelle spezie marocchine.

INGREDIENTI
1 porzione
Per il pollo
  • 1 petto di pollo (circa 230 g)
  • 1/2 cucchiaio di olio extravergine di oliva
  • 1/2 cucchiaino di cumino in polvere
  • 1 cucchiaino di paprika dolce
  • 1/4 cucchiaino di zenzero in polvere
  • 1/4 cucchiaino di cannella in polvere

Per il couscous
  • 1/4 cavolfiore medio, tagliato in cimette
  • 1/2 cucchiaio di olio extravergine di oliva
  • 1 cucchiaio di menta fresca tritata
  • 1 cucchiaio di succo di limone + scorza grattugiata di 1/4 limone
  • 1 pizzico di cumino in polvere
  • 1 pizzico di sale
  • 2 datteri Medjool, denocciolati e spezzettati
  • 10 g di pistacchi sgusciati

PROCEDIMENTO
Per il pollo
  • Preriscaldate il forno a 220°C.
  • In una piccola ciotola, unite il cumino, la paprika, lo zenzero e la cannella, quindi mescolatevi l'olio.
  • Strofinate il mix sul pollo e trasferitelo in una teglia oleata.
  • Cuocete in forno per circa 20 minuti, finché il pollo non è cotto. Togliete dal forno e fate riposare 5 minuti.

Per il couscous
  • Mettete il cavolfiore nel robot da cucina e tritate finché non ha l'aspetto del couscous.
  • Scaldate l'olio in una padella antiaderente su fiamma media. Aggiungete il cavolfiore e cuocete, mescolando spesso, finché il couscous non è leggermente dorato, circa 5 minuti. Togliete dal fuoco e lasciate raffreddare leggermente.
  • Aggiungete il cumino, succo e scorza del limone, menta e sale e mescolate.

  • Prima di servite, unite al couscous i datteri e i pistacchi. Trasferite in una ciotola e completate con il petto di pollo.
